OFOBO NMONG EFERE

Ofobo Nmong Efere (Yam pepperpot serves 4)
This traditional Akwa Ibom dish is generally served to nursing mothers but it can also be served as ceremonial dish on festive occasions.

Peel and wash the yam, cut into medium chunks and place in a clean pot. Pour in the stock or water and add the rest of the ingredients. Season with salt, cover and cook for 15-20 minutes until yam is soft. When cooked, removed the yam from the stock and serve separately on a dish. Serve fish and stock separately as accompaniment to yam.

1 medium tuber of yam
1 ltr /2pints stock or water
250g 1 8oz ground crayfish
50g / 2oz ground chillies
I large smoked dried fish (washed)
I bunch ntong leaves (mint) washed & shredded; salt to taste

Variation
Substitute fish with cooked goatmeat when served at traditional festivals.
